Weekly Meal Prep for Busy Professionals in Kochi: A Realistic Plan

If you work in Infopark, SmartCity or anywhere along the Kakkanad stretch, you know the weekday lunch problem. The canteen is repetitive, food apps are expensive and oily, and cooking at 6 am is not happening. Meal prep, cooking several meals in one session, solves most of this. The trick is keeping it realistic.

What meal prep is, and what it is not

Meal prep does not mean eating the same chicken and broccoli for five days. It means cooking components on Sunday, then mixing them into different meals through the week. Rice, one dal or curry, one vegetable dish, a protein and a salad base is enough for four or five lunches with variety.

The two-hour Sunday routine

  1. Cook the grain (20 min). Matta rice, brown rice or quinoa, enough for four lunches. Let it cool completely before boxing.
  2. Make one protein (30 min). Chicken curry, egg roast, fish in a thick gravy, or a big pot of kadala or rajma. Cook it a little drier than usual so it reheats well.
  3. Cook one vegetable dish (20 min). Cabbage thoran, beans mezhukkupuratti or a mixed vegetable sabzi. These keep well for three to four days.
  4. Prepare raw sides (15 min). Cucumber, carrot and onion in a separate box. Add just before eating so they stay crunchy.
  5. Boil eggs and portion snacks (10 min). Six eggs, roasted chana, a handful of nuts in small containers.

Storage in Kerala weather

Our heat and humidity are not forgiving. A few non-negotiables:

  • Refrigerate within one hour of cooking. Food left out overnight is where most "food poisoning" stories begin.
  • Use shallow containers so food cools fast. A deep pot of curry stays warm in the middle for hours.
  • Cooked rice is safe for three days in the fridge. Fish and chicken curry two to three days. Freeze anything meant for Thursday or Friday.
  • Reheat until steaming hot, not just warm. An office microwave at 60 seconds is usually not enough for a cold box.
  • Keep raw salad separate from hot food until you eat.

When meal prep stops working

Be honest about this one. Meal prep fails when travel, late nights or a sick child eats your Sunday. Then the boxes do not get made and the week slides back to parotta and food apps. If that is your pattern more weeks than not, having fresh meals delivered to the office is not laziness, it is a better system. Pro Calories delivers calorie-counted lunches to offices across Kochi; companies can also set up corporate meal booking for their teams.

Either way, the goal is the same: a planned lunch, every working day, without thinking about it at noon.
